The “Passion Trompe-l’œil” is a frozen dessert designed to visually resemble a passion fruit. It consists of a light mousse made from a blend of exotic fruit puree (mainly passion fruit), an exotic fruit coulis with chunks of fresh mango as an insert, all encased in a colored white chocolate shell to replicate the fruit’s appearance. A colored flocking is applied to perfect the illusion.
